BBC FOOD Mango Chutney
Ingredients
- 4 large mangoes, peeled, stoned and sliced
- salt
- 4 cloves garlic, peeled and crushed
- 450g/1lb caster sugar
- 2 baking apples, peeled, cored and chopped
- 1 tbsp English mustard powder
- 1 tbsp grated fresh root ginger
- 600ml/1 pint white wine vinegar
- 1 tbsp cayenne pepper
Method

Put the mango slices in a large bowl and sprinkle with salt. Leave overnight. In the morning, drain off the juice and rinse the fruit.

Put the garlic, sugar, apples, mustard, ginger, vinegar and cayenne pepper in a pan and, over a low heat, dissolve the sugar.

Bring to the boil and add the mangoes. Simmer for 30 minutes until the chutney is thick and syrupy. Spoon into sterilised jars and seal.

6. Chop Some Apples and Light The Oven
In my garden in England the apples and pears were always ready at the end of September/ beginning of October. Chances are it's a similar case for you. What better way to spread some light than to ask some friends around to enjoy your first autumnal meal!
BBC Apple Crumble Recipe
Ingredients
For the crumble
- 300g/10½oz plain flour, sieved
- pinch of salt
- 175g/6oz brown sugar
- 200g/7oz unsalted butter at room temperature, cubed, plus a little for frying
For the filling
- 450g/1lb apples, peeled, cored and cut into 1cm/½in pieces
- 50g/2oz brown sugar
- 1 tbsp plain flour
- 1 pinch ground cinnamon
Method
- Preheat the oven to 180C/350F/Gas 4.
- Place the flour, salt and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs.
- Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon. Stir well being careful not to break up the fruit.
- Butter a 24cm/9in ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top.
- Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling.
- Serve with thick cream or custard

Michaelmas, or the Feast of Michael and All Angels, is celebrated on the 29th of September every year. As it falls near the equinox, the day is associated with the beginning of autumn and the shortening of days.
It used to be said that harvest had to be completed by Michaelmas, therefore it It was the time at which new servants were hired or land was exchanged and debts were paid. This is how it came to be for Michaelmas to be the time for electing magistrates and also the beginning of legal and university terms.
St Michael is one of the principal angelic warriors, protector against the dark of the night and the Archangel who fought against Satan and his evil angels. Legend tells us that Satan was driven out of heaven on this day and landed in bramble bushes. Therefore it is traditional to have bramble or blackberry pies, desserts or jam on this day.
